Vermicelli Upma Recipe: An Easy Millet-Based Breakfast

Ingredients for Vermicelli Upma

Main Ingredients:

Ingredient Quantity
Kodo Millet Vermicelli 200 g
Bull Driven Groundnut Oil 2-3 spoons (or as required)
Onion 1 medium-sized, finely chopped
Tomato 1 medium-sized, finely chopped
Green Chillies 2, finely chopped
Coriander Leaves A handful, finely chopped
Curry Leaves A few

For Tempering

  • Mustard Seeds – ½ tablespoon
  • Cumin Seeds (Jeera) – ½ tablespoon

Water & Salt

  • Water – Sufficient quantity for boiling the vermicelli
  • Salt – As required

How to Make Vermicelli Upma

1. Cook the Kodo Millet Vermicelli

Take sufficient water in a vessel and bring it to a boil. Add the Kodo Millet Vermicelli to the boiling water and cook for approximately 5 minutes, or until the vermicelli becomes soft and properly cooked.

Once cooked, carefully drain the excess water using a colander and keep the boiled vermicelli aside.

Tip
Avoid overcooking the vermicelli, as this may make it too soft or sticky. Cooking it just until tender helps maintain a pleasant texture in the Upma.

2. Prepare the Tempering

Heat a tawa or wide pan over medium flame.

Add Bull Driven Groundnut Oil and allow it to heat gently.

Add:

  • ½ tablespoon mustard seeds
  • ½ tablespoon cumin seeds (Jeera)
  • A few curry leaves

Allow the mustard seeds to splutter and let the cumin seeds and curry leaves fry until aromatic. The tempering releases a wonderful traditional aroma into the oil and forms the flavour base of the Upma.

3. Sauté the Vegetables

Add the finely chopped onions, green chillies and tomatoes to the tempering. Mix everything well and sauté on medium flame for approximately 5 minutes, stirring occasionally.

Cook until the onions become soft and slightly translucent and the tomatoes soften well.

Add salt as required and mix thoroughly.

4. Add the Vermicelli

Once the vegetables are properly sautéed, add the boiled and drained Kodo Millet Vermicelli to the pan. Gently mix the vermicelli with the sautéed vegetables and tempering, ensuring that everything is evenly combined.

Cook for another 2–3 minutes on low to medium flame, allowing the vermicelli to absorb the flavours of the vegetables, spices and Bull Driven Groundnut Oil.

Avoid vigorous stirring, as it may break the vermicelli.

5. Garnish & Serve

Turn off the flame and garnish the Vermicelli Upma generously with freshly chopped coriander leaves.

  • Cook the vermicelli just until tender to avoid a soft or sticky texture.
  • Drain the boiled vermicelli properly before adding it to the pan.

  • Mix the vermicelli gently to prevent it from breaking.
